Westsail used two nylon or teflon washers between the bottom end of the rudder and the bronze gudgeon. I have a drawing of the rudder backbone assembly for the W42/43. It does not specify the size of the pipe, but it should be 2" ID x 2-3/8" OD pipe.
If you are making the gudgeon from stainless, then a sleeve bearing might be a good idea. Make it from teflon or fiberglass, instead of metal. Be sure to put a zinc on the gudgeon, and replace it regularly.
